When my mom visited after my daughter was born she made us some delicious salmon cakes, which I had to share here. She doesn’t exactly measure anything when she makes them, so I had to guess. Mine weren’t quite as good as hers, but it’s hard to know if it’s because I made them differently or because things just taste better when someone else makes them.
Anyway, they are very fast and easy, and my 3 year old loves them, so they’re a good way to get some good protein, omega-3s, and calcium.
Salmon Cakes
1 15 oz can salmon
1/2 cup fresh bread crumbs
1 1/2 Tbs lemon juice
1/2 tsp lemon zest
1 egg
1 tsp dried onion
1 tsp dried basil
Olive oil
Tartar sauce
1/2 cup mayo
1/2 tsp dill
1 Tbsp lemon juice
Enough milk to achieve desired consistency
Remove the skin and any large bones from the salmon, smaller bones are OK, you won’t notice them. (I admit this part was a little gross). Mix the salmon together with the remaining ingredients except the olive oil. Pour enough oil into a cast iron frying pan to coat the bottom, and heat it over medium heat. Shape the salmon mixture into patties and fry until they are browned and crusty on each side.
Serve with tartar sauce.
