We’ve been trying to cut back on white flour and refined sugar at my house. So that means most sweets are off the menu. But I’ve been experimenting with a cookie recipe that is healthy and low in sugar. I really like these whole wheat oatmeal cookies cookies - especially for an afternoon snack or for breakfast. They’re pretty hearty and filling. They’re made with Turbinado raw sugar, which is evaporated cane juice. The sugar comes in large granules that don’t dissolve into the dough like regular granulated sugar does. So the sugar carmelizes while the cookies bake and gives them a nice texture. This recipe makes about 15 cookies, so you may want to double it.
Whole Wheat Oatmeal Cookies
1/2 cup butter, softened
1/2 cup Turbinado raw cane sugar
1 egg
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp vanilla
1 1/2 cups rolled oats
1/4 + 1/3 cups whole wheat flour
1/2 cup dried cranberries or raisins or 2 oz very dark chocolate, chopped
1/2 cup chopped walnuts
Preheat the oven to 375 degrees. Cream the butter with the sugar, then beat in the egg. Add the baking powder, salt, cinnamon, and vanilla. Then stir in the flour and rolled oats. Add the dried fruit or chocolate and nuts. Shape about 2 tsp of dough into a disc. The cookies will not change shape much as they bake. Bake 12 minutes, until they just start to brown. Cool completely before eating.
